• Basic Roasted Vegetables
You can cook just about any vegetable this way, either alone or in combination. This recipe calls for my favorites, asparagus and broccoli.
• Garlic Roasted Radicchio
I am not a fan of raw radicchio, but I like it roasted, which brings out its better bitter qualities. I learned to cook radicchio this way while in Italy.
• Broccoli Rabe with Sausage
I'm a broccoli rabe freak. I love it cooked almost any way. The success of this dish is dependent on the proper toasting of the anchovies and the garlic.
• Stuffed Zucchini Pancakes with Crabmeat
To me these pancakes are the epitome of summer tastes: fresh-picked zucchini and crabmeat.
