| Stromboli is a calzone-like enclosed sandwich of cheese and pepperoni wrapped in pizza dough. |
| Makes 1 Stromboli: |
Ingredients:
6 oz pizza dough (see "Figs Pizza Dough" recipe)
1 tsp Olive Oil
4 oz shaved red onion
2 oz chopped cherry peppers
6 oz sliced pepperoni
6 oz sliced salami
6 oz shaved ham
4 oz sliced mozzarella
Salt and pepper to taste

Instructions:
Place a baking stone in the oven and preheat the oven to 500 degrees.
On a floured work surface, roll out the dough as thin as possible. Cover the surface of the dough with the Olive Oil and a pinch of salt and pepper. In the center of the dough, begin layering the ingredients as if you would for a sandwich. Leave room at the outer edge of the dough to enclose the ingredients. Bring the top of the dough and the bottom of the dough over the ingredients and crimp the dough together creating a tight seal. Do the same with both ends cutting away any excess dough. Sprinkle some flour/semolina onto a pizza peel and transfer the Stromboli to the peel with the crimped dough on the bottom. Cut 3 to 4 small vents in the top of the Stromboli to allow the steam to escape. Gently slide the Stromboli onto the preheated baking stone and bake until brown, approximately 12 to 15 minutes. Remove Stromboli from oven and let rest for 5-10 minutes before cutting. |
