• Penne with Lobster and Green Tomato Sauce
Like most New Englanders, I'm always trying to figure out what to do with the extra green tomatoes from my garden. After many attempts to fry them creatively, I came up with this sauce.
• Chilled Black Olive Spaghetti Salad
As a rule, I dislike cold pasta salads, but for this one I make an exception. Serve this by itself or place it in a large serving bowl, make a well in the center, fill with tomato and mozzarella salad.
• Country Shells with Sausage, Cannellini Beans and Spinach
This is a hearty dish that's perfect for a fall or winter day. It's a complete meal in itself and very quick to prepare.
• Eggplant and Red Lentils with Pasta
There was a time in my life when I wanted to stop eating meat but I wasn't quite ready to give up the heartiness and texture. This recipe satisfied both needs.
