• Mango-Raspberry Granita
Mangoes are my favorite fruit. I love having some of this granita in the freezer for those times I need a little bite of something sweet after dinner.
Serves 4:
Ingredients:

1 cup water
1/2 cup fresh orange juice
2 teaspoons rice syrup (available at health food stores), honey, or white sugar
1 teaspoon vanilla extract
3 ripe mangoes, diced
1 medium-ripe to overripe banana, diced
1 pint fresh raspberries
Instructions:

• Place the water, orange juice, rice syrup, and vanilla extract in a medium-size saucepan and bring to a boil over high heat. Add the mangoes and banana and cook until the mangoes are soft and all the liquid has been absorbed, about 10 minutes. Set aside to cool.

• Place the mixture in a blender and blend until smooth. Add the raspberries by hand. Place the mixture in a baking pan and place in the freezer until solid, at least 2 hours. Scoop out of the pan with an ice cream scoop or a spoon and serve immediately.
