| Mangoes are my favorite fruit. I love having some of this granita in the freezer for those times I need a little bite of something sweet after dinner. |
Serves 4:

Ingredients:
1 cup water
1/2 cup fresh orange juice
2 teaspoons rice syrup (available at health food stores), honey, or white sugar
1 teaspoon vanilla extract
3 ripe mangoes, diced
1 medium-ripe to overripe banana, diced
1 pint fresh raspberries

Instructions:
Place the water, orange juice, rice syrup, and vanilla extract in a medium-size saucepan and bring to a boil over high heat. Add the mangoes and banana and cook until the mangoes are soft and all the liquid has been absorbed, about 10 minutes. Set aside to cool.
Place the mixture in a blender and blend until smooth. Add the raspberries by hand. Place the mixture in a baking pan and place in the freezer until solid, at least 2 hours. Scoop out of the pan with an ice cream scoop or a spoon and serve immediately. |
